Stephen’s Stir-fried rice noodles with vegetables
Serves 2- 4
½ tsp of chopped Garlic
2 tsp of chopped Ginger
1 packet of stir-fry veg or chopped veg of your choice ( e.g 1 courgette, 1 pepper, 2 mushrooms, 1 onion, half a pack of spring greens and some water chestnuts)
1 tsp salt
2 tbsp light soy sauce
½ a packet of rice noodles
1 tbsp Dark Soy Sauce
1 packet of stir fry sauce
1. Soak the rice noodles in a bowl of warm water for 25 minutes, then drain.
2. Heat a wok or large frying pan until it is very hot. Add the oil, and when hot, toss in the ginger, garlic and vegetables then stir-fry for 15 seconds.
3. Next, add sauce. Stir-fry for 1 minute.
4. Next add the noodles, followed by the salt, light soy sauce. Stir-fry for about 3 minutes until the noodles are well-mixed and heated through. Serve at once.
